Cooking with Oak Brandy Smokin’ Chunks- Charcoal Grill
When Indirect Grilling: To each mound of lit charcoal, add 2 to 3 chunks (four to six in total). Once the smoke stops flowing, replenish as needed.
When Direct Grilling: Grill the food directly over 2 to 3 chunks directly on the bed of coals.
How to Direct Grill Over a Wood Fire: As you would with charcoal, fill your chimney starter with wood chunks and light them. Pour the orange-coloured embers over the bottom of the grill when they are glowing. By inserting the grate, you can grill directly over wood.
